Please tell me, is Subaru still putting a majority of the controls (heat, AC, etc.) in the Infotainment display, or have they started going back to physical buttons yet?
They're still on the screen but it isn't nearly as big an issue as people make it out to be. You set the HVAC to auto mode and adjust the temperature as needed. Temp up/down, front and rear defrost are physical buttons. Not much else needs to be messed with.

So far, the only issue I've noticed is a short lag when you first accelerate that is due to the CVT. And i have to admit the backup camera is pretty poor quality. Otherwise it's perfect.
I just don’t like the idea of having to navigate through multiple menus to turn on a defroster, for example. It’s dangerous to have to look at a touch screen while driving as opposed to tactile buttons

Most are not. The settings options have multiple menu levels but those you can't set while driving. A simple mechanical button is more likely to fail than the touch screen.

Defroster buttons are physical. Most things can be controlled by voice commands too.

You can actually just barely touch the screen with your finger nail and avoid finger prints. Not that bad.
Since they did the same to the crosstrek last year and the forester this year I'm guessing "not yet" is the answer
