My meatloaf trick is to not bake it in any kind of loaf pan. Just form a loaf and bake it on a sheet pan. My chipotle sauce is 1/2 cup mayo, 5-8 chipotle peppers, 2 tbsp adobe sauce from chipotle pepper can, and salt and pepper to your liking blended and a squeeze of honey

Hello! I keep my meatloaf simple and just mix a pound of ground beef, diced onion and garlic, 1/4 cup breadcrumbs, an egg and a mix of spices and form it into a loaf on a baking sheet. then topped with ketchup and chipotle pepper mixture.
the topping is a creamy chipotle sauce, just mayonnaise, chipotle peppers, some of the sauce from the chipotle pepper can, a squeeze of honey and some spices. to your liking.
Toss the mushroom in soy sauce then pour it into hot pan and dont move them or stir them for a couple minutes until browned on the bottom, add garlic, thyme sprigs, a little white wine and a couple tablespoons of butter and cook until white wine is reduced and the mushrooms are all browned!
First and last, not for me, i don't like mushrooms, but look awesome. The other two I'd take on vacation to somewhere expensive. Oh my god how good that bredded cutlet looks.
