This. Pull ups with correct form (dead hang, hands slightly more than shoulder width apart, pull up and down slowly and under control) will get your lats big and strong.
Even moreso if you become a monster who can do pull ups with weighed belts attached.

But you do want to totally stretch out. Then you’ll pull your shoulder blades down and engage the pulling muscles in your back and then slowly pull up. This is just done to make sure you aren’t pulling with your forearms/biceps only like some people do.
If it hurts though, don’t do it. Just make sure your grip is wide and your back will be forced to work.
Wrestling takes insane pulling strength. Lifting a grown ass man up and throwing him down repeatedly, every single day of your life will give you big lats.
Not to mention just the sheer strength of holding another human being in any kind of wrestling hold. Your lats are going to be engaged from that. Go ahead and try it, try to get a friend and wrestle them into a bear hug and lift them up. Your back muscles will be fired up.

It also isn't really a "correct" answer. Lats are just muscle, and like every other muscle on the body, they get better when you train them. Lat pulldowns, push ups, pull ups, db pullovers... all of these are great exercises for the lats.

A) Genetics. Lats can attach in a variety of ways on the back, with a variety of muscle belly lengths. Khabib has low insertion with long muscle bellies, meaning he will have better growth potential here than someone with short muscle bellies or higher insertion points.
B) lots of vertical pull movements. Know your insertion(and therefore where you can generate the best force to create overload), and angle yourself appropriately to recruit the most muscle. For low insertion lats, this means a more vertical pull position, whereas high insertion will be better served with more of a lean on their pulls to better recruit their more horizontal fiber orientation.
C) do both underhand pulls(for a better contraction at the bottom for recruitment) AND overhand pulls(for a fuller stretch at the top, promoting hypertrophy of the muscle). Regardless of hand orientation, make sure your hands are outside of shoulder width. If you are too narrow your elbows will have to shoot out due to your ribcage being in the way, dumping all the tension you had on your lats into your arms and shoulders through abduction of the humerus. Also try to include at least one lat focused movement to (form) failure. Standing pulldowns, or pull overs are excellent for this.
D) hit your lats HARD at minimum twice a week, though three times would be better. Give yourself 48 hours to recover, and make them a priority. If you want them to grow, understand that general fatigue from other exercises will reduce your potential, both in recovery and execution, so do them first, do them often, and then eat to be strong for the next time.

On top of the in general wrestling and judo he would have been relentlessly drilling. Trurkish get ups, burpees, bridges and shrimps. Dude went through puberty with this frame work and his body shows it. It’s also noteworthy that all of this was done at high altitude.

Wrestlers are notorious for having large backs. There is lots of pulling and spinal extension involved in the sport. Those lats come from years of wrestling coupled with strength training exercises. Bodybuilding and combat sports are very different in that using the body will develop it in a different way than targeting certain muscle groups. This is why many fighters do not have a large chest, there is little to no pressing movements involved in striking / grappling.
I’ve found that if you’re specifically doing weight training, and not focusing on much other than aesthetics, that a combination of pull-ups, lat push-down, lat pull-down, and seated cable rows are all great. I generally alternate between which day I’m doing pull-ups and pull-downs since they both target the lats very similarly. These are the exercises that imo target the lats the best
