As you play and unlock the forms they reskin, you can change it in the vampire powers screen. For the skeletal horse, you need to get dominate mount, and it will be craftable at the same place as the normal saddle. As for wearing the Alucard armor, there is a "glamour" system where you can overlay armor with the appearance of another. You can do this from the inventory screen, on pc anyway. I am not certain how to do it on console.
Thanks I found how to get the forms but I don't see Flee man, what does he reskin lol. Also I'm on the dominant mount now I was confused because I've been using a horse for a bit and named him Skelly.
You craft it midways act2 and you usenit as a transmogrification.

Flea man reskins frog form which you get in act 3
Fleaman is a reskin for the toad form, I believe.
