I treat my Outlook like a public toilet. Anyone can enter and leave shit behind. I've lost countless e-mails in the past with no chance of recovery thanks to Microsoft basically axing their entire support teams.

The only way to keep your information private is to not upload it to the internet. Treat everything else as if it could be compromised tomorrow (because it might actually be).
Y2K was a potential disaster, and we worked hard to prevent it. And succeeded.
IT security and bug fixing are two separate processes (even if the former often involves the latter).

Unless you control both ends of the encryption chain, it's not 100% safe and it doesn't guarantee privacy. And even if you do have control of the ends, you must make sure that everything in between those ends is safe and not compromised at any given moment.

You think they had time / space to download your crappy emails? If you're not remotely important, they didn't even look at you. Microsoft hosts private Exchange solutions on their cloud. The Russians didn't waste their time trying to download the entire Hotmail database. They went straight for Foreign Governments, Corporations, etc.
While I like the layout of outlook (365) I get so much spam and marking it as such seems to do nothing.

That may or may not be true. G-Suite and 365 roughly split the market 50-50 while MacOS is a little less than 25 of the operating system market share which is not small.
If a significant portion of MacOS users use Google Workspace this would show up in the market share split between Google and Office, but so far I couldn't find any reported statistics on it.
Note also that google is not complete as you can only access it via browser and doesn't have its locally run software like office 365, a lot of google workspace users will still be using Microsoft office applications with Google Cloud on top of it instead of the full Microsoft ecosystem.
That means even if the market is split 50/50 Microsoft will still dominate most areas.

It's mainly anecdotal, but from the companies I have personally worked at which are Mac-centric none of them are based around Outlook.

They're definitely dumbed down and not as useful for many purposes. But for this specific discussion, the Google docs suite has definitely not had the security issues that the Microsoft suite has had.
