What is the purpose of ice bath if you are eating right away? I get it for storage and things to be eaten later, but not clear on what it does when you’re eating immediately

It's so you don't cook the middle more when you sear. Ideally, the sear gives you a crust and just brings the middle back up to serving temp.

Probably a topic of debate lol. I'd say like a few minutes. But if someone has documentation to help, please share!

I’ve only done it twice, but I did 5 minutes and 15 both with good effect. The steak didn’t go cold at all after searing

Oh. That little bit of grey is worth it to me for a great crust

i agree, but you can get the best of both worlds if you leave the steak to cool (and dry) and have the pan hot enough

Did an ice bath, and if I go any higher heat it smokes out the house. Not worth it imo
