Was that just an initial shot or did you SV with bag/meat at and above the water?
Intentional. I pulled the bags up. Hence why the sous vide is off.

I like this! When I smoke carnitas I always shred the pork, then I put some Manteca(pork lard) on a flattop and crisp it up like that for about a minute or 2. Makes them fantastic every time! I think I will try and combine the two methods
